Dreamy Bacon & Egg Slice

Serves 4
Super tasty, super easy, super healthy. Great for dinner, lunchboxes or to take on a picnic. Full of flavour and loaded with vegetables. Kid friendly, Thermomix friendly. This appears regularly on our dinner table.

Ingredients

  • 2 tbsp of Dreamy Carrot & Nutmeg spice
  • 1 onion
  • 1-2 zucchini
  • 1 carrot
  • 30 g olive oil
  • 6 eggs
  • 4 tbsps of flour
  • 3 thick sliced rashers of bacon cut into pieces with the fat trimmed
  • 200 g grated cheese (we love feta but use your favourite)

Instructions

  • Cut onions in quarters and add to the TM bowl along with 30g olive oil.
  • 5 secs | speed 4 | then scrape down the sides of the TM bowl and cook for 2 mins | speed 1 | 90°.
  • Add in roughly chopped zucchini and carrot. At this point you can swap the carrot and zucchini for any vegetables of your choice.
  • 5 secs | speed 5 to get a really finely chopped consistency. Less if you like your vegetables chunky.
  • Add in eggs, flour and Dreamy Carrot & Nutmeg Spice Blend.
  • 5 secs | speed 3
  • Pour into a lined tin and sprinkle over the cheese and bacon pieces.
  • Cook in a preheated at 200° fan forced for 25-30 mins until nicely golden on top.
  • Leave to cool slightly and then slice and serve sprinkled with bacon dust and some grated parmesan cheese or allow to go completely cold in the fridge. Cut into slices and enjoy!

Notes

Bacon Dust
Pimp your slice by cutting the bacon fat trimming into little pieces and cooking in the oven alongside your slice until completely crisp. Once cold place in a Ziploc bag and bash into tiny pieces to sprinkle over the pie. This is next level delicious and worth the extra bit of effort :).

Ingredients

  • 2 Tbsp Dreamy Carrot & Nutmeg spice mix
  • 1 onion
  • 1 zucchini
  • 1 small tin of corned (drained)
  • 30 g olive oil
  • 6 eggs
  • 4 tbsp self raising flour
  • 200 g feta

Instructions

  • Cut onions in quarters and add to the thermomix bowl along with 30g olive oil and a roughly chopped zucchini.
  • 5 secs | speed 4 | then scrape down the sides of the thermomix bowl and cook for 2 mins | speed 1 | 90°.
  • Add in eggs, flour and Dreamy Carrot & Nutmeg Spice Mix and feta 5 secs | speed 3.
  • Add in tinned corn 5 secs | speed 3 reverse.
  • Pour about 1/3 cup of mixture into a muffin tin lined with individual muffin cases.
  • Sprinkle over cheese and crumbs if you are using them* see note.
  • Cook in a preheated oven at 200° fan forced for 15 mins until or nicely golden on top.
  • Leave to cool slightly and then serve with a salad or soup or just enjoy them on their own.

Notes

Cheese and Crumbs
Because who can resist grilled cheese? Sprinkle a little bit of grate cheese and a few fine breadcrumbs onto just before cooking. This makes these little beauties even more delicious and worth the extra bit of effort.

Sausage Rolls spiced with Dreamy Carrot & Nutmeg

Ingredients

  • 15 g Dreamy Carrot & Nutmeg Spice Blend
  • 1 Brown Onion
  • 1 Carrot
  • 500 g Pork Mince
  • 1 Egg
  • 4 Sheets Frozen Puff Pastry
  • 20 g Olive Oil
  • 50 g Dry Breadcrumbs

Instructions

  • Thermomix Recipe
  • Finely chop onion and carrot, saute over a medium heat until soft. Add pork mince and an egg with 15g spice blend. Add dry breadcrumbs and combine. Spread onto puff pastry and roll.
  • Brush with milk or beaten egg and cook for 20-30 minutes or until golden and cooked through.

Notes

Can be enjoyed both hot and cold ????

The vibrant colours and textures of a layered salad in a jar look impressive and it’s easy to take to a picnic or barbeque. Creating the salad is a fun way to get your kids involved in meal preparation. My son Zac likes to create a “Rainbow Salad” with his favourite veggies and dressed with his favourite Dreamy Carrot & Nutmeg vinaigrette.
