Ingredients
  1. 15g Dreamy Carrot & Nutmeg Spice Blend
  2. 1 Brown Onion
  3. 1 Carrot
  4. 500g Pork Mince
  5. 1 Egg
  6. 4 Sheets Frozen Puff Pastry
  7. 20g Olive Oil
  8. 50g Dry Breadcrumbs
Instructions
  1. Thermomix Recipe
  2. Finely chop onion and carrot, saute over a medium heat until soft. Add pork mince and an egg with 15g spice blend. Add dry breadcrumbs and combine. Spread onto puff pastry and roll.
  3. Brush with milk or beaten egg and cook for 20-30 minutes or until golden and cooked through.
Notes
  1. Can be enjoyed both hot and cold 🙂

Mini Carrot & Nutmeg Egg Bites

Super tasty, super easy, super healthy. Great for dinner, lunchboxes or to take on a picnic. Full of flavour and loaded with vegetables. Kid friendly, Thermomix friendly.

Ingredients
  1. 2 Tbsp's Dreamy Carrot & Nutmeg spice mix
  2. 1 onion
  3. 1 zucchini
  4. 1 small tin of corned (drained)
  5. 30g olive oil
  6. 6 eggs
  7. 4 tbsp's self raising flour
  8. 200g feta
Instructions
  1. Cut onions in quarters and add to the thermomix bowl along with 30g olive oil and a roughly chopped zucchini.
  2. 5 secs | speed 4 | then scrape down the sides of the thermomix bowl and cook for 2 mins | speed 1 | 90°.
  3. Add in eggs, flour and Dreamy Carrot & Nutmeg Spice Mix and feta 5 secs | speed 3.
  4. Add in tinned corn 5 secs | speed 3 reverse.
  5. Pour about 1/3 cup of mixture into a muffin tin lined with individual muffin cases.
  6. Sprinkle over cheese and crumbs if you are using them* see note.
  7. Cook in a preheated oven at 200° fan forced for 15 mins until or nicely golden on top.
  8. Leave to cool slightly and then serve with a salad or soup or just enjoy them on their own.
Notes
  1. Cheese and Crumbs
  2. Because who can resist grilled cheese? Sprinkle a little bit of grate cheese and a few fine breadcrumbs onto just before cooking. This makes these little beauties even more delicious and worth the extra bit of effort.

Dreamy Carrot & Nutmeg Sweet Potato Soup

Ingredients
  1. 2 tablespoons ghee
  2. 1 large brown onion
  3. 1 Sachet Dreamy Carrot & Nutmeg Spice Blend
  4. 3 cups diced sweet potato
  5. 3 cups chopped peeled carrots
  6. 3 cups vegetable stock
  7. 1 1/2 cups water
  8. 1 pinch salt (optional)
  9. 150-200 ml cooking cream (optional)
  10. Parsley to garnish
Instructions
  1. Melt ghee in a saucepan over medium heat and then add the onion. Once softened add the sachet of Dreamy Carrot & Nutmeg spice blend. Move to one side of the dish. Add 1 tablespoon ghee, melt then add the sweet potato and carrot and stir through the ghee. Then add the water and stock and salt if desired. Stir through the onion and spice blend mix. Bring to a boil and then simmer until cooked.
  2. Cool and let sit for 5-10 mins and then blend with a handheld kitchen mixer preferably. Can be cooked in a thermomix or mixed in a food processor. Cream can then be added and the soup is ready to be served!
Notes
  1. Perfect for children as it is kind sweet and nutritious! Great soup for dipping bread! 🙂

Ingredients
  1. 1 cup Wholemeal CousCous
  2. 11/2 tablespoons Dreamy Carrot & Nutmeg Spice Blend
  3. 1 tablespoon Sultanas
  4. 1 1/4 cup boiling water
  5. Ghee
  6. 1/2 Red Capsicum
  7. 1/2 Green Capsicum
  8. 1/2 Yellow Capsicum
  9. 2 small Oranges
  10. Pinenuts
Instructions
  1. In a large bowl combine CousCous with Dreamy Carrot Spice Blend and Sultanas. Stir in the boiling water and cover. Stand 6 minutes and fluff with a fork.
  2. In a saucepan heat 1 tablespoon of ghee and when heated add the pinenuts. Then add the 3 x capsicums diced and cook until slightly softened.
  3. Dice one peeled orange.
  4. Stir the sauce mix with the cous cous and then lightly toss through the orange or leave on top.
  5. Squeeze orange juice on top to taste.
Notes
  1. Great for kids as a meal or used as a salad as a side dish :).

Ingredients
  1. 2 tbsps of Dreamy Carrot & Nutmeg spice
  2. 1 onion
  3. 1-2 zucchini
  4. 1 carrot
  5. 30g olive oil
  6. 6 eggs
  7. 4 tbsps of flour
  8. 3 thick sliced rashers of bacon cut into pieces with the fat trimmed
  9. 200g grated cheese (we love feta but use your favourite)
Instructions
  1. Cut onions in quarters and add to the TM bowl along with 30g olive oil.
  2. 5 secs | speed 4 | then scrape down the sides of the TM bowl and cook for 2 mins | speed 1 | 90°.
  3. Add in roughly chopped zucchini and carrot. At this point you can swap the carrot and zucchini for any vegetables of your choice.
  4. 5 secs | speed 5 to get a really finely chopped consistency. Less if you like your vegetables chunky.
  5. Add in eggs, flour and Dreamy Carrot & Nutmeg Spice Blend.
  6. 5 secs | speed 3
  7. Pour into a lined tin and sprinkle over the cheese and bacon pieces.
  8. Cook in a preheated at 200° fan forced for 25-30 mins until nicely golden on top.
  9. Leave to cool slightly and then slice and serve sprinkled with bacon dust and some grated parmesan cheese or allow to go completely cold in the fridge. Cut into slices and enjoy!
Notes
  1. Bacon Dust
  2. Pimp your slice by cutting the bacon fat trimming into little pieces and cooking in the oven alongside your slice until completely crisp. Once cold place in a Ziploc bag and bash into tiny pieces to sprinkle over the pie. This is next level delicious and worth the extra bit of effort :).

Ingredients
  1. 1 400g can of four bean mix
  2. 1 small can sweet corn kernels
  3. 1 small can of spicy tuna*
  4. 60g feta
  5. 1 tbsp pepitas
  6. 1 tbsp pinenuts
  7. 1 tbsp Dreamy Carrot & Nutmeg mix
Instructions
  1. Drain the four bean mix, corn and tuna. Combine in a large salad bowl with the Dreamy Carrot & Nutmeg mix, crumbled feta, pepitas and pinenuts. Mix well. Season to taste with salt and cracked black pepper. Serve with hummous, a drizzle of olive oil, a splash of balsamic vinegar and finish with an extra sprinkle of Dreamy Carrot & Nutmeg mix.
Notes
  1. *Replace spicy tuna with tuna in spring water for a kid friendly version.
  2. I also add fresh tomatoes, avocado and diced cucumbers if I have them.
