Moroccan Chicken BBQ & Cucumber yogurt with Magical Mint & Coriander Dipping Sauce

Ingredients
  1. 800 g Chicken thigh fillets
  2. 3 tablespoon of The Spice Trading Co, Rockin' Moroccan Medley
  3. 1 lemon, juiced
  4. 1 tablespoon of Greek yogurt
  5. 2 tablespoon of Extra Virgin Olive oil
  6. 10 heirloom carrots
  7. 1 bulb of garlic
  8. 1 lemon, cut in half
  9. Salt, to season
  10. Pepper, to Season
  11. Cucumber Yogurt with Magical Mint & Coriander Seasoning Mix
  12. ½ cup of Lebanese cucumber, diced
  13. 1 ½ cups of Greek yogurt
  14. 1 teaspoon of the Spice Trading Co, Magical Mint and Coriander Seasoning
  15. Juice of ½ lemon
  16. 1-2 Red Chili, finely chopped
  17. Coriander leaves, to garnish
Instructions
  1. 1. Preheat the oven at 180 degrees.
  2. 2. To make the Moroccan Chicken BBQ, combine the chicken in a bowl with the Rockin Moroccan Medley gourmet spice, lemon juice, Greek yogurt, extra virgin olive oil, salt and pepper. Make spices coats the chicken evenly. Leave the chicken to marinade in the fridge for 15 to 20 minutes or overnight.
  3. 3. To prepare the cucumber yogurt with Magical Mint & Coriander, add the diced cucumber in a bowl. Add Greek yogurt, Magical Mint & Coriander seasoning, lemon juice, chopped red chili and mix well. Sprinkle more of the seasoning to finish and garnish with coriander leaves.
  4. 4. To make the carrots, half boil the carrots in a pot. Drain the water from the carrot and then coat the carrots with some olive oil and more of the Rockin Moroccan Medley seasoning and some salt. Set aside.
  5. 5. Once the chicken is marinated, char the chicken in the BBQ so you get the nice char marks and continue to sear the chicken and all sides. Continue to do this with the lemon and the garlic.
  6. 6. Transfer the chicken, lemon, garlic and carrots on to a baking tray lined with baking paper and finish cooking in the oven for 15-20 minutes or until the chicken is cooked through.
  7. 7. Serve the Moroccan chicken BBQ with the roasted carrots alone with the cucumber yogurt with magical mint and coriander.
Notes
  1. • To ensure the chicken is cooked through, finish cooking the chicken in the oven.
  2. • Char the lemon and garlic to add the BBQ flavour.
  3. • Marinade the chicken overnight with the spices and the yogurt to intensify the flavour and to tenderize the chicken.

Ingredients
  1. 2 large potatoes (optional)
  2. 1/2 teaspoon turmeric
  3. Salt
  4. 1 tablespoon ghee
  5. 1 medium onion
  6. Black mustard seeds
  7. 2 teaspoons Magical Mint & Coriander Spice Blend
  8. 4 tablespoons natural yoghurt
Instructions
  1. Cut and dice potatoes and wash. Bring water to a boil in a saucepan and then add the potatoes, 1/2 teaspoon turmeric and a pinch of salt.
  2. In a frypan heat the ghee and add the black mustard seeds and then the onion. Cook until softened and then add the Magical Mint & Coriander spice blend. Stir and then add natural yoghurt, blend and turn off the heat.
  3. Drain the potatoes and return to the saucepan. Stir part of the blended mixture through the potatoes and put the remainder in a side dish.

Ingredients
  1. 1 Sachet Mint & Coriander Spice Mix
  2. 1 250g Crème Fraiche or an alternative ie greek style natural yoghurt
  3. 1 pack of Chapati's
  4. 1 tub of Tabouli from your local supermarket or alternatively make your own
  5. 1 pack of Falafel's from your local supermarket or make your own
Instructions
  1. Combine Mint & Coriander Spice Mix with 250g of Crème Fraiche or an alternative and let sit 30-60 minutes or longer if time allows.
  2. Simply spread the dressing onto the chapatti and then add your tabouli and falafel's on top. Roll and eat 🙂 Some dressing can be left on the side as a dipping sauce for left over falafel's!
Notes
  1. Hot sauce can be added to the wrap or sweet chilli as an alternative.

Ingredients
  1. 500g pasta bows
  2. 1 bunch of asparagus chopped into bite sized pieces
  3. 1 cup frozen baby peas
  4. 3 tbsps natural yoghurt
  5. 1 tbsps magical mint & coriander spice blend
  6. Olive Oil
Instructions
  1. Cook the pasta as per the directions on the package. With 5 minutes to go, add in the asparagus spears followed by the baby peas. Once tender, drain, stir through some olive oil and set aside.
  2. In a small bowl or jug add 3 tablespoons natural yoghurt and 1tablespoon Magical Mint and Coriander spice blend. Stir well. Pour over the pasta and gently mix to combine.
  3. Serve immediately or refrigerate until needed.
Notes
  1. I like to sprinkle parmesan cheese and black pepper before serving.

I had a craving and have been perfecting a recipe for light and crispy South Indian style dosas at home. I think I've got it! I've been using The Spice Trading Company Gourmet Dip and Seasoning Mixes. I dipped my crispy dosas in the Magical Mint and Coriander blend made into a dip. I blended 1/2 packet with 125gms natural plain yoghurt for a perfect accompaniment! Crispy, lacy dosas for people who love Indian food but find it hard to get the right ingredients. These dosas are gluten free. Perfect for snacks, dipping into chutneys and as an accompaniment for curries.

Ingredients
  1. 1/2 cup buckwheat flour
  2. 1/2 cup rice flour
  3. 1/4 cup plain yoghurt
  4. 1 tbsp coconut oil
  5. 1 cup carbonated water
  6. 1 tsp flaky sea salt
  7. 1 green jalapeno chilli, finely chopped
  8. 2 tbsp coriander, finely chopped
  9. 1 spring onion, finely chopped
  10. 1/2 tsp cumin seeds
  11. 1 tbsp chia seeds
Instructions
  1. Add the buckwheat flour, rice flour, yoghurt, coconut oil and water to a blender. Mix well and check the consistency of the batter. It should be like double cream. Add more water, 1 tablespoon at a time if needed.
  2. Add the salt, chopped chilli, coriander, onion, cumin & chia seeds. Stir to combine and let this mixture rest for about 15 minutes. Check again the consistency and add a little water if thickened too much.
  3. Heat a large griddle or frying pan until smoking hot. Pour a ladle of batter in a circular motion and turn the pan to allow it to spread out as much as possible yet still stay together.
  4. Cook for 3-5 minutes on this side, then flip for another minute on the other side. Set aside on a plate while you cook the other dosas.
Notes
  1. If you don't have buckwheat flour, you can easily grind whole buckwheat kernels in a food processor. If you can't find buckwheat, then you could use oats (and grind them down as well). The end result will not be as crispy though.
  2. These dosas can be made in advance then heated up in a skillet right before serving.

Ingredients
  1. 1 sachet Magical Mint & Coriander Seasoning Mix
  2. 1 smoked garlic clove
  3. 1/2 red onion
  4. 500g pork mince
  5. 40g stale bread in pieces
  6. Milk
  7. 2 eggs
  8. 125-250g Greek yoghurt unsweetened
  9. Olive Oil
  10. Butter
Instructions
  1. Soak the bread in milk in a small bowl and set aside.
  2. Finely dice the garlic and red onion. Add the pork mince, 2 eggs and mix. As an option 1/2 sachet of the Magical Mint and Coriander Seasoning Mix can be added for flavour.
  3. Squeeze the milk out of the bread and add bread to the pork mixture. Discard the milk.
  4. Roll the mixture into even sized balls with oiled hands.
  5. Place directly into a frying pan with butter and oil over a medium heat turning until cooked through and golden.
  6. Dipping Sauce
  7. Use 1/2 - 1 sachet Magical Mint & Coriander Seasoning Mix to 125-250gms Greek yoghurt and allow to sit for 30mins or more in the refrigerator. Depending on how much dipping sauce is required will depend on how much of the sachet is used.
